Layer cakes are used mostly for birthdays around our house.  When I want a quicker cake, I use a 13×9 baking pan and ice the cake right in the pan.  Check to see if a cake is done by either sticking a clean straw into the batter to see if it comes out clean, or by lightly pressing your finger in the center of the cake.  If it springs back, the cake is done.,  Sift flour for a cake.  For an even lighter cake, sift a tablespoon of cornstarch for each cup of flour with the dry ingredients.  Any cake recipe may be made into cupcakes by pouring the batter into greased muffin tins.  Reduce the cooking time to 20 minutes.
